Oaxacan Chorizo All-Beef Sausage/ Slider Patties

Perfect for breakfast with sunny-side-up eggs, or as a slider with a Oaxacan Chorizo kick!

PREPARATION

Slice your Oaxacan Chorizo into 1/4-1/2-inch thick rounds (1/2-inch rounds are best for sliders, 1/4-inch rounds are great for breakfast sausage)

Heat 1 tbsp oil (or butter or bacon grease) in a skillet over medium heat.

For 1/2-inch rounds cook about 7 minutes total, flipping every 1-2 minutes. For 1/4-inch rounds, cook about 6 minutes total.

Remove from heat (can be set on a plate with paper towel on it to absorb some of the fat).

TO SERVE

Serve as a simple breakfast sausage with eggs, as an egg sandwich on an english muffin (don’t forget some melty cheese in there), or as a slider in a toasted potato bun with thin-sliced tomato, lettuce, and your choice of condiments.
