Oaxacan Chorizo All-Beef Lightning Chili

People have VERY strong feelings about chili, we know, so consider this your baseline only— add whatever you want! You can add beans or loudly voice your opposition to beans. We are Switzerland on the bean front! Serve with sour cream, shredded cheese, cilantro or parsley, this is your chili, so you do you!

INGREDIENTS

2lbs Oaxacan Chorizo Ground Beef (one package)

2 tbsp Meltable fat of your choosing (olive oil, butter, or, if you’re like our family, bacon grease)

1 medium Onion, chopped (this is totally optional)

2 Small Cartons of crushed tomatoes (approx. 35oz— you can easily increase this amount if desired)

PREPARATION

  1. Melt fat/oil/butter in the bottom of a heavy-bottomed pot over medium heat.

  2. Optional— add chopped onion and stir for 3-5 minutes.

  3. Add Chorizo, and brown for a total of 10 minutes— smoosh and chop it with the edge of a wooden spoon to break it into smaller pieces.

  4. Add Crushed Tomato, bring to a boil, cover pot with a lid, and cook for 10 minutes. Remove lid and cook for 20 minutes more, until tomato is cooked and reduced to your preferred thickness.

  5. If you like chunk, serve as is with your preferred accoutrements. If you like it a bit smoother (our preference), use a stick- or immersion-blender and pulse for a minute or 2, until things look the way you want them to look.

  6. That’s it! Seriously.
